Fantastic Find: Fat Daddio's Meringue Powder


 Royal icing ingredients are kind of a big deal in my life. As in... I do NOT kid around about them. And I do not trade up my favorites. With the craziness surrounding meringue powder this last year though , and the skyrocketing prices of egg white powder... I've been testing a bunch of different choices so I would have a good back up in the event that my world ends and I can't find my favorite egg white powder.


So when Fat Daddio's emailed and said they had a new meringue powder this summer , I jumped on the chance to try it out. I'll be honest. By that point , I had tried a few different meringue powders and they were all very much alike. I expected Fat Daddio's to fall into the same line as the rest of the meringue powders I had tried and would have been pleased if it had. But to say I was surprised at the taste is an understatement. Without ANY flavoring at all -- this meringue powder tastes BEYOND AMAZING. It's like angel food cake batter but with butter in it too. Like a buttery vanilla ice cream that won't melt. I'm not good at describing taste... so let me just say -- it's fantastic. SERIOUSLY FANTASTIC. Like... I wanted to eat it with a spoon. And I might have. My husband certainly did. He was an instant fan of the flavor and wanted to know how soon I would be switching to Fat Daddio's entirely.

Oh! And randomly , it's noticeably whiter than all the other royal icings I made this summer. So there's that. And...you know how you have to add a ton of food coloring for some of the darker or saturated colors? I haven't had a color YET that has changed the flavor! Even when I accidentally added twice the amount of pink I needed -- it wasn't bitter at all. It still tasted almost buttery sweet. It's like a sugar cookie miracle.


At this point , you're probably wondering just what in the world they put in that meringue powder...and here it is. Amazingness , apparently. The box doesn't specifically state that it's made in a nut-free environment , so I would call Fat Daddio's if you need to be sure...but I don't think they make any products with nuts at Fat Daddio's so this could be a good option for nut-free shops.

But since meringue powder is kind of a big deal , like I said , I wanted to make sure I tested it out quite a bit before reviewing it for you or making any kind of switch. I've used it wet-on-wet and in areas where I would normally get craters. Let me preface the results by saying first that I don't traditionally have many icing issues. And I almost never have icing issues when I use egg white powder. I sometimes get a little cratering with ANY meringue powder. And the Fat Daddio's meringue powder had about the same number of issues as any of the other meringue powders I used this summer. By that I mean -- I didn't have any color bleed (but I never do) and I did experience a little bit of cratering now and then , but again , not a lot and certainly not every time.

The only real downside to the Fat Daddio's meringue powder is that once it is made into royal icing , it doesn't stay "good" as long as other royal icings. Specifically , and this is awful , but I can keep a bowl of royal icing in my cupboard for over 4 weeks before it gets musty and goes bad. (You know it's gone bad because it smells like dirt.) Before you hate on me , you should know that royal icing usually doesn't last more than 4-5 days in my house. I'm just saying it CAN last that long. Royal Icing made with the Fat Daddio's meringue powder only lasted about 2 weeks in the cupboard before it got weird. It's not a deal breaker , because ideally , you would use fresh icing or toss it in the freezer for another time. But if you are a procrastinator and leave it on the counter for a couple of weeks...you'll have to toss it.

There are A LOT of different meringue powders on the market. And most of them work just fine. If you currently love the flavor of the meringue powder you use and don't have any real issues...Fat Daddio's meringue powder isn't a necessity item. Use what works for you.


Bottom Line: Fat Daddio's meringue powder is sold in 12 ounce boxes for around $15. At about $1.25 per ounce , it's on the low end of average pricing for meringue powder. A pretty standard meringue powder that is competitively priced and has an UNBELIEVABLE flavor?? Surely it's worth experimenting with just one box.
